Wow that sounds yummy. I make a version like that but crush about 1 c. of pork rinds per pound of breakfast sausage & 1 pound of grated cheddar and don't use the ground beef.

Someone mentioned Scotched eggs (I think that's what they are called) -- have you all tried those? 1 pound breakfast sausage 4 shelled boiled eggs. Divide sausage into 4 and wrap around each egg. Bake at 350 degrees F for 35 mins. That sounds amazing too!! I guess you could add cheese around the egg before you wrapped the sausage around it! Probably be a good idea to put foil on your baking sheet -- would save clean up time!!

I know this is an old thread...but will these be ok for induction? I'm not totally hardcore as I'm looking to have around 20 carbs per day...whichever Atkins version that is, ha ha. I'm asking because I see the sausage which I'm sure has filler?

My sausage that I buy is 100% meat and no filler, 0g carbs.
My Atkins version is DANDR and I use my carbs for veggies which are on the allowed list, cream, cheese and eggs.

Bulk sausage shouldn't have fillers. Check the ingredient list before buying.

This link has the basics of the DANDR but if you don't have a book, my suggestion would be to buy one off of ebay or amazon because in the book you will find lots of tips and advise and also a carb counter in the back of the book that makes it easy to flip through and build your menu based on carb counts in seconds verses spending lots of time searching individual items on line.
One example for me would be looking at the veggie list on the link and the first veggie is Artichoke. Now Artichoke in my DANDR book is 13.4g carbs so a better choice might be for some of the lower carb veggies which in the end will give you more food and more nutrients for your carb counts.
That's what the carb counter is good for.
