Pasta Ali Olio (spaghetti squash)
 
1 large spaghetti squash

1/2 cup olive oil
2 cloves garlic crushed
salt and pepper
1/4 cup of fresh chopped basil
grated cheese

pierce spaghetti squash all around the vegetable with a sharp knife. Put in microwave and cook 15 min one side, flip 10 minutes for other side. (depends on size of squash) could use more or less, depending on size.

COOL.

After squash has cooled so that it can be handled, pull out seeds and discard, and then take fork and pull out strings of pasta looking threads from squash.

in frying pan, heat olive oil and saute crushed garlic on low. When olive oil has a wonderful garlicky fragrance, add squash and heat through, tossing to coat pasta with olive oil and garlic mixture. turn stove off, throw in fresh basil, and salt and pepper to taste. Sprinkle grated cheese and serve....

Very simple, very good, very lo carb!

i'm going to try your microwave method for my spaghetti squash. Sounds easier than boiling, lol. I'm so not a good cook.

I keep meaning to ask actually, is this any good?? I meansquash in general tends to be watery - is spaghetti squash different?

Spaghetti Squash is wonderful and not watery - I cook it so it still has a little bite to it (think al dente!) It is one of those things I could eat way too much of if not careful!

i had spaghetti squash for the first time last night! Cooking it was so simple by putting it into the microwave (i cut mine in half first), and it really does look like pasta!...more like angel hair pasta. The taste is pretty bland like pasta with just a hint of sweetness. The sweet taste is very easy to mask with all of the yummy ingredients you put into it. Last night I added butter, sausage and cheese...then topped with sour cream and sprinkled with hot sauce. It was sooo good AND FILLING. I couldn't eat that entire half of the squash. I had the rest for lunch at work today. Now, I still have the other half of the squash waiting for tonight.
