Low carb / keto crunchy buttery salted caramel pork rinds (as a snack OR as cereal!)
 
Take some plain pork rinds and break them into small bite sized pieces.

In a saucepan, toss in 2 tbsp of salted butter and melt it. Then brown it.

Remove from the heat, and add in 2 tbsp heavy cream. Stir. Place pan back on heat.

Mix in 1 tbsp of granulated erythritol. Keep stirring over heat until a caramel forms. Remember--it will still be liquid-y.

Stir your pork rinds into this delicious caramel sauce. Toss those little pork skin pieces all around and coat them well.

Transfer them to a plate or foil and let them cool. Now pig out!

OR--- you can use them as a type of cereal! Yes, cereal!

CHILL them in the fridge for 20 mins before you want some cereal. Add in one cup of unsweetened vanilla coconut milk and sprinkle with some cinnamon. Dig in with a spoon and say MMMMmmmmmmm!

So you guys know, you can add a packet of splenda or whatever you like to the coconut milk. Add in a little bit of vanilla flavoring. It's heavenly!

And totally low carb and keto. Now go fix some!!
