Neanderthin Chili
 
Neanderthin Chili

2 pounds ground beef
˝ cup finely chopped onion
3 cloves garlic, chopped
1 can chopped tomatoes
2 tablespoons chili powder, or more if desired
2 tablespoons dried oregano
Oil

Heat some oil in a large skillet or casserole dish. Add the onion and garlic and cook until golden. Add the ground beef, mixing well with the onion and garlic and then allow the meat to brown. Stir in the chopped tomatoes, add the chili powder and oregano. Reduce the heat to low and allow to simmer for at least 2 hours.


This is my version of NeanderThin Chili, from Ray Audette’s book NeanderThin: Eat Like a Caveman to Achieve a Lean, Strong, Healthy Body. The original recipe can be found here.

I make mine using ground beef with the lowest fat content (5%) and use avocado oil to cook the garlic and onions in.
