Pan fried radishes
 
If you like crunchy, pan fried potatoes with your eggs, you might want to try frying some sliced radishes in butter with salt and pepper. I tried this today and it was excellent. It really hit the spot.

I love roasting them and seasoning like hash browns. I bet skillet makes them even faster- great idea- thanks!

I just started doing this - it's my new favorite vegetable. Along with jicama. My recipe had a note that I couldn't remember where I got the idea - now I know.

I fried 1/2 radish slices with 1/2 jicama matchsticks in butter. What a great combination! They go very well with fried eggs. I tried adding scrambled eggs to the radish & jicama mix - another winner. :yum:

I've heard of this but never tried it. Do you fry the radishes long enough that they get brown, like fried potatoes?

They do brown a bit, but don't get "crispy" like potatoes because there's no starch.

Tip: if you eat pork, then frying in bacon fat lends a nice "home fried" taste. Sometimes I'll crush a few pork rinds and toss them in just before serving to lend a little crunch :idea:. Some chopped onion and a pinch of thyme is nice too :yum:
