Chocolate Mousse
 
I've been making this since I first learned to cook - a very long time ago. I can't remember where I found the recipe. It is called Chocolate Mousse, though it is not at all what most people think of when they hear that name. Everybody I have served it to loves it. It only just recently occurred to me that this is essentially low carb.

The original recipe (followed by my comments)

1 cup (6 oz) chocolate chips (I use a high cacao, dark chocolate bar, chopped)
6 large eggs
1/4 tsp cream of tarter
1 or 2 (or 3) Tbls cognac or good brandy

Melt the chocolate in a double boiler, or microwave
Combine the eggs, cream of tarter, and cognac in a blender, and mix at a medium low speed. With the blender running pour the chocolate into the egg mixture, using a rubber spatula to scrape it all in. Mix thoroughly. Pour the mixture into small serving containers - I use demi-tasse cups, and serve with tiny coffee spoons. Chill in the 'fridge; it will set up firm. This is very rich, and a little goes a long way ;) The recipe makes enough for 6 or 7 demi-tasse cups - which comes out to approx. 1 oz of chocolate and 1 egg per serving.

I suppose you could make this more mousse-like by folding in whipped cream, but I have never felt the need. This makes a delightful, elegant, small, but very satisfying finish to a nice dinner.
