Coconut Slice – an Aussie favourite!
 
After watching my DH devour a coconut slice the other day I decided to see if I could make a low carb version. I used a Women’s Weekly recipe to get the general idea and then just adapted it to make it low carb.

The base is a modified pie tart recipe that I’ve seen somewhere and works well for this application. The first time I made this I baked it in a lamington pan and got 10 good sized pieces. This time I made individual tartlets using muffin pans, which I prefer because I didn’t have to use as much jam. By my calculations each tart comes in at about just over 2g carbs. Have a look at them here: -

Coconut Slice/Tartlets
Makes 10

Base
50g butter
50g cream cheese
1 cup almond meal
½ tsp baking powder
1 egg
12 Splenda tabs, crushed
¼ to 1/3 cup Cottee’s sugar free strawberry jam
Topping
2 cups unsweetened coconut
2 eggs
1½ tsp sucaryl liquid sweetener (or other sweetener equiv to 3 tbsp sugar)

Cream butter, philly cheese and Splenda then add egg and beat until smooth and creamy. Stir in baking powder and almond meal in two batches. Divide mixture between 10 greased muffin pans and spread to cover the base of each pan (mixture is very sticky so I just used a slightly wet finger to do this). Next drop a glob of jam onto each base and spread out a little. Top with coconut mixture and press down slightly to stop it from being too crumbly when cooked. Bake for approx 20 mins at 180C (slightly lower for fan forced oven). Cool on wire rack. Store in fridge. Topping : Fold coconut into lightly beaten eggs and sweetener.
Note: This recipe may not be sweet enough for other people’s tastes. On my first attempt I used twice as much sweetener but found it way too sweet. It comes down to personal taste….I just can’t handle overly sweet things anymore. Next time I make these I’m going to use half coconut and half almond meal in the topping and use apricot jam instead of strawberry.

Let me know how they turn out. These are my husband's new favourite treat after my caramel pecan muffins.
Moving from Tassie to WA will be a bit of a shock to the system in the middle of summer!

I'm fairly certain that 1 tablet is equal to 1 teaspoon of powdered Splenda.

They look very yummy. Thanks for sharing :). I think i'll try them with the apricot (the Golden Circle apricot diet jam leaves all IXL and Cottee's diet jams in the dust).

Dumb question - but it seems that a lot of people on here are using the splenda tabs instead of the powder. Is this because they have a lowe carb count due to less filler? If this is the case i'll have to pick some of them up today.

yes they are much lower in carbs than the powder, they have no filler.

Actually I just checked the fridge and it was Golden Circle stawberry jam that I used, not Cottee's.
I've just got back from grocery shopping and one of the things I bought was the new Splenda sweetened IXL seedless blackberry jam. When I compared the carb count with the Golden Circle jam the IXL comes out in front at 5.3g carbs per 100g as opposed to the Golden Circle which is 8.8g carbs per 100g. So now it's a case of whether to go with the taste or lower carbs.
Is there any rule that says you can't use blackberry jam in a coconut slice? My DH is pestering me for more please!!

Hope they turn out....my DH can't get enough of these! Strawberry jam is definately the favourite in this house. Blackberry was too strong on flavour and the apricot (IXL) too bland.

quick question, you know how you said you get about 10 pieces, will they keep in an air tight container for a few days, or could i freeze them? if not i'll just half the batch.

I keep them in a tupperware container lined with paper towel in the fridge and they keep just fine for 5 days (we have one each per day). I keep all my low carb muffins etc. in the fridge.
