I created this last night and it turned out pretty well:

Cauli-Faux Risotto

1/2 cup raw cauliflower
1 scallion chopped finely
2 tablespoons of butter
2 tablespoons freshly shredded parmesean cheese


Grate the raw cauliflower using large holes on a hand grater into a bowl and set aside.
Melt the butter in a non-stick skillet.
Add chopped scallions and saute briefly over medium heat until they begin to wilt.
Remove pan from heat and toss the grated cauliflower in the pan with the butter and scallions until evenly coated.
Put the cauliflower-butter-scallion mixture into a microwaveable bowl. Put Saran wrap over the bowl, leaving a small opening to vent the steam.
Microwave for about 50-60 seconds.
Fluff the mixture with a fork and sprinkle with the shredded parmesean.

I had this with a boneless chicken breast that I cut into strips, sauted with some mushrooms, a tablespoon of marsala and 2 tablespoons of heavy cream. It turned out nice and without a lot of "cauliflower" taste.
