I created this recipe last night for dinner and thought it turned out pretty good:

Chicken Nachos:

1/2 package plain Atkins Crunchers chips
1 cooked boneless chicken breast shredded
1 OZ shredded sharp cheddar cheese
1 or 2 tablespoons low carb salsa
1 tablespoon sour cream

Place the Atkins Crunchers on a microwaveable plate.
Sprinkle shredded, cooked chicken evenly over the chips.
Drizzle salsa evenly over the chicken and chips.
Sprinkle the shredded cheese evenly over the chicken and chips.

Microwave for about 40-60 seconds depending on your microwave until cheese has just melted. Top with the sour cream and enjoy.
