I posted this under crustless pizza but wanted to post it again in case anyone missed it. This is So good! :daze:
Known for my Friday Nite homemade pizza you can imagine how I suffer not being able to eat it :( !Even though I am dieting the family still wants their pizza! So here's what I do - I make
CHICK-A-PIZZ-A! Here's how:
1 semi defrosted chicken breast sliced horizontally (sometimes I
get three thin slices)
Pizza sauce ( I make my own) any low carb will do
Assorted toppings: mushrooms, olives, pepperoni, sausage, etc.
Mozzarella cheese (or your favorite kind) shredded
Sautee chicken cutlets (slices) in olive oil over medium heat for "soft crust" OR on higher heat for "crunchy crust" for 2 or 3 minutes until no longer pink. Remove from pan and put on greased cookie sheet.
Top each piece with sauce, favorite topping(s), a sprinkle of oregano, basil, salt and pepper and drizzle with olive oil.
Next comes the Mozzarella :p sprinkle however much your carb count allows!
Place in a hot oven (425 F.) or under broiler until the cheese melts. Be careful not to burn the cheese Keep checking it. This is absolutely yummy :roll:
