This is from the Fat Flush Book, I am making it today and will be back to give a review:


Ingredients:
1 pound lean ground beef
2 tablespoons garlic, minced
2 teaspoons fresh parsley, chopped
1/4 cup diced onion
4 cups no-salt-added beef broth
1 carrot, chopped
1 cup spinach, chopped, packed, and well drained
fresh garlic, minced, for garnish

combine the beef, garlic, parsley, and onion togeather
shape into 1/2 inch meatballs
brown meatballs in a nonstick skillet over medium heat until cooked and set aside
pour broth into a large pot, add chopped carrot and bring to a boil
Reduce heat, add meatballs, and simmer covered for about 20 mins.
add spinach and simmer for 15 minutes longer
garnish with lots of fresh garlic

Oh this soup is good. I love spinach and this is great. I had to stop myself from eating the entire pot. I containered it up and froze it. This recipe makes 4 servings.

I remade this using the entire bag of spinach and loved it even more.

This soup is so wonderful!! I made it today and even used much more spinach than suggested (a whole 10oz box) but it was wonderful. Just couldn't believe how delicious it was!

Added a sprinkle of parmesan on top of each bowlful.

Wow, I am definately making this again!!!

Did a vegetarian version using gardenburger meatballs.

I had a recipe similar to this except it used the waxed chicken broth. Oh drool .... !

I just love the Italian Wedding Soup at East Side Mario's.

You can also use escrole! You can also add an egg or two beaten with parm or any Italian grated cheese. YUM!

try adding some crushed pepper flakes for a little kick. GREAT!!!!

This soup is GRRRRREAT!
I did make a few additions/subtractions though (mostly because I didn't have everything onhand when I made it)

no parsley in the meatballs
Add a little salt to the meatball mixture
used chicken broth instead of beef (the italian soup we like is from Campbells and they use chicken broth - plus it was all I had)
no carrot
add some spices to the broth - garlic powder, white pepper

My DH and I loved it! Yummmm!

Thanks guys for the reviews. I still make this and keep it in the freezer for a snack or dinner when BF isn't here. I tried it with different cheeses on top and I loved it too, Thanks for the suggestion.

Sorry Peach I just got the book back and all it says is 4 servings. It has to be next to nothing though. I will try it on fitday! I ate this for lunch everyday for about 3 weeks. I did use a bag of spinach instead of 1 cup, but I will do it both ways.

Actually when I made this I got 6 serving because I used an entire bag of spinich.

I know how to cook about 5 things. I dislike cooking. I made this tonight because I have to always concentrate on vegetables to lose, and I do not wish to eat salads when it 2 degrees out!!

This was EASY. DELICIOUS!!! I topped it with some Parmesan cheese and it REALLY hit the spot. I, too, used all the spinach. I could have added another can of beef broth too. Oh, MAN, this is sooooooo good, and I actually MADE it!!!

I'm glad you liked it, I made me some for the snow we are getting tonight and tomorrow so I can just cuddle around the house with it the next few days stuck in. I found it really easy to make and you can add different things to it if you like.

I gotta try the parm cheese myself I did a slice of prevalone on top like the french onion soup.
