Karen, I've noticed that you always have the best resipes. I absolutely love eggplant, so I went out and bought two pretty large eggplants. Now I don't have any thing to do with them...do you have any suggestions of a meal i can make with it? I saw the buttery tuna with caper resipe, but i dont like capers, and I'm not fond of tuna. I've looked in some other cookbooks, even regular ones, to find a recipe that I could maybe adapt to low carb, but as of yet I haven't found anything worthwhile. Your help would be greatly appreciated!

Hi Rachel!

I don't have any specific recipes but ratatouille is a good place to start. Here's a recipe for a baked version (http://www.cooksrecipes.com/mless/oven-ratatouille-recipe.html) aand one from Low Carb Luxury (http://www.lowcarbluxury.com/recipes/recipe-combo12.html) which contains meat.

Other recipes to search for are bharta - or bartha or barta - which is an India eggplant dish, eggplant lasagna and caponata, an Italian dish.

i recently posted a recipe for mediterranean lamb & eggplant - it's under the main dish section of the recipes board (it's on the 2nd page of the posts). if you like middle eastern flavours, it's really good!

Lasagna made with eggplant instead of noodles is very good.
