This one is the easiest main course ever -- the main idea comes from Fran McCullough, but the garlic and onions are my idea.
-- Cut a pork shoulder into one-inch cubes and season with sea salt and freshly cracked black pepper.
-- Cook at 200 degrees for 2 hours, turning every half hour.
-- After the first half hour add 3-5 peeled onions (small).
-- After the second half hour add 1-2 heads of garlic cloves, peeled.
The roasted pork, onions, and garlic make te best -- and easiest -- meal I've had in a while!
