This is different but tasty. I haven't figured the carbs on this but the picante sauce that I used has 2g per 2 tablespoons. I especially like that there is no clean up and the wedges can bake along with something else in the oven.

Oven-Baked Cabbage

1 medium head cabbage
4 tsp bacon drippings, divided
salt and pepper to taste
1/2 cup water, divided
4 tablespoons picante sauce, divided

Wash cabbage and cut into 4 wedges. Remove any tough outer leaves. Place each wedge on a piece of heavy-duty aluminum foil. Spread each wedge with 1 teaspoon of bacon drippings (bacon grease to you non-Southerners). Sprinkle with salt and pepper to taste. Wrap foil tightly around cabbage, leaving one end open. Into the open end, spoon 1 tablespoon picante sauce and 2 tablespoons water. Seal tightly. Bake at 350 degrees for one hour.
