I have almond flour, whey protein, flax meal, vital wheat gluten, guar gum, bran, egg white powder, baking soda, baking powder...and want to come up with a bake mix.

Does anyone know how much gluten you have to add per cup?

Should I add guar gum or does it depend on what I am making?

What do I have to add/remove if I want to make muffins vs. brownies vs. a cake?

I want a good base combination as a mix to start and if I need to add anything depending upon what I'm baking I can.

If anyone has any info. on this I would be much appreciated.
