I can't believe this worked!!!...
Here it goes..
2 eggs
2/3 cups atkins bake mix
4 oz cream cheese
1 pinch salt
7-10 packets AS
2 little cube things of unsweeted chocolate (the ones I used are cubed and wrapped in sets of 2..)
Soften cream cheese and choc seperatley.. (be careful when microwaving chocolate..)
Mix all ingredients in a bowl except choc.. this will be thick... real thick...
Spray either small loaf pan.. or muffin tins.. ( I use two small spring form pans) with pam or like substance..
Spoon in mix into pans...
Dump melted choc on top of it all.. Now with a small knife cut back and forth in the mix.. this will mix the choc up in your batter..
Bake at 350 for about 20 min *check with toothpicks for when done).
ENJOY!!! (I also added a small dab of the SF rasberry syrup to the mix..)
It is a small touch dry.. but really good.. maybe some Cream cheese frosting will liven it up!
