There's some great ideas flying around for the Jubilee parties here. Most of them are carb-loaded but Shanghai Balls appealed to me:

Mix together:

Mince (lamb/ pork/ beef / chicken etc )
Tofu (with the water completely drained out through cheesecloth)
Eggs (to bind together I expect)
Herbs and Spices (vary according to personal taste)

Make into small balls and put 3 balls to each cocktail stick.

Grill, Bake, or Barbeque.

***********

This one LOOKED sooo great it set of some of my triggers. Marinate King Prawns in a nice spicy tandoori sauce - nothing special. Here comes the "secret". Make 3-4" spears from SugarCane. Spear through the King Prawns and barbeque. The sugar seeping into the marinated prawns ... don't look, don't look - not if you want to stay committed to LCing.

I'm posting it hoping someone might think of an alternative to the Sugar Cane that is LC friendly.
Take care
