Bummer... you need to dirty two bowls for this. :(

Dump into a microwavable bowl:

1/4 C. Lupin flour
1/2 tsp baking powder
1/4 tsp baking soda (you can omit)
pinch of xanthan gum (optional)
1-3 tsp of cinnamon (or more!)
1-2 Tbl of sweetener (equiv to that amount of sugar)

Mix dry ingredients well.

Using a fork, cut about 1.5 - 2 Tbl of softened butter into the flour mixture until it resembles pills. Like lint that pills up on blankets.

Crack an egg right on top of that mess and stir well until egg is well incorporated. I use jumbo eggs.

Microwave for 1-2 minutes, until dough isn't raw.

Frosting

2+ Tbl of cream cheese
1/4-1/2 tsp vanilla
Sweetener to taste

Mix those together

Pry the muffin out of the bowl (mine release easily) and then frost it!

Absolutely awesome!

Counts using 1 Tbl of cinnamon and no cream cheese:
Calories: 289
Fat: 20g
Protein: 20
Net Carbs: 3.5 (ish)
Fiber: 14.7

Most of the carbs are from the cinnamon (according to My Plan).

This just gets better!

I sprinkled the top with Ideal Brown and even more cinnamon then topped with cream cheese, vanilla frosting.

It is amazing!

Today's variation knocked my socks off.

Frosting: cream cheese, liquid splenda, caramel flavoring. I warmed the cream cheese in the micro so it would stir up better. Then I stirred in my liquid splenda (4-5 drops), then stirred in the flavoring.

I frosted my Bowl Cinnabun and sprinkled pecans on top of it.

Wow, wow, wow!

Just confirmed it can be done with almond flour/meal. It isn't quite as good as the lupin flour, but put enough cinnamon and sweetener in it and you really won't care.

One other suggestion: after you've mixed it well, put more cinnamon and sugar-sub on top. I've been using Ideal Brown. Very good brown sugar sub, but you can do the same mixing a little molasses with erythritol, truvia, or something that isn't dextrose-based, like splenda.

I gave up lupin flour to see if it might help my arthritis, not sure it did, but I had an opportunity to try this recipe with other flours and meals:

Almond meal: Works great, be careful not to over cook. I used 1/4 cup.
Cashew meal: Worked really well. I picked up some of this in Trader Joe's. I'm sure the processors must get rid of cashew pieces that are too small to sell that way.

Since I don't use frosting any longer, I top with a sprinkle of cinnamon and a couple of spoonfuls of brown non-caloric sweetener (like Ideal Brown).

Never heard of lupin flour. What is the consistency like and where can i buy it?
