This weekend I was taking a look at some for the recipes in the forum and I came up with this one. Taking ideas from other recipes. Tested on Hubby and it worked out well. So I hope you will try this recipe. Takes a couple min to prepare. Easy, Please share any modifications you make to make it more wonderful, This is a recipe in the making.
Pepperoni and Cheese Handfuls
1.Beat 3 lg. egg with 4 tablespoons cream and 2 tablespoon of olive oil and 2 pkg. of splenda
2. Mix in 1-1/2 cup LOOSLEY packed GROUND ALMONDS and 1 teaspoon each of salt, baking powder
3. Pour half the batter into a GREASED (PAM) mini loaf pan, or 6 medium muffin cups.
4. Top with aprox 1 cup chopped pepperoni sticks and 1 cup (NACHO BLEND) shredded Cheese
5. Pour on the rest of the batter, doesnít spread well over pep and cheese layer blob it down in 4 corners of pan smooth as well as u can, donít worry if its not perfect it will still be great.
Bake in the oven at 350 for 30 minutes or till golden brown
remove from mini loaf pan turning out onto cool rack
Cut into 4 Handfuls = 5.21 carbs
Cut into 6 Handfuls = 3.47 carbs
4 muffin = 5.21 carbs
6 muffin = 3.47 carbs
