Chicken New York Style

1 Servings

From Monday to Friday cookbook

1 tablespoon olive oil
1 skinless boneless chicken breast half
1/2 tablespoon minced garlic
2 tablespoons chopped fresh parsley
1 tablespoon balsamic vinegar
1 tablespoon chopped sun-dried tomato halves in oil
1/4 cup chicken stock
salt
freshly ground black pepper
1 tablespoon butter

Heat the oil in a skillet or wok. Add the chicken breast and garlic and saute for 3 to 4 minutes.

Add the remaining ingredients except butter to the skillet and bring to a bubble and simmer for uncovered until the sauce is reduced. Finish the sauce with the butter and serve.
