Chicken Middle Eastern Style

1 Servings

From Monday to Friday cookbook

1 tablespoon olive oil
1 skinless boneless chicken breast half
1/4 cup minced onions
2 tablespoons chicken stock
1/8 teaspoon dried oregano
1/4 cup currants
salt
freshly ground black pepper
1 tablespoon chopped fresh mint
2 tablespoons creme fraiche

Heat the oil in a skillet or wok. Saute the onions in until they are translucent. Add the chicken breast and saute the chicken for 3 to 4 minutes.

Add the remaining ingredients except the mint and creme fraiche to the skillet and bring to a bubble and simmer uncovered until the sauce is reduced.

Remove from the heat. Add the mint and creme fraiche and serve.
