50g flax seed
50g sunflower seed (or ground almond)
50g unflavoured whey protein
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp xanthan gum
1 fl oz water or milk
2 large eggs

Pre-heat oven to 170C / 325F

Grind the flax and sunflower seeds to a fine flour. Mix with the whey, soda, baking powder and xantham gum.
Whisk the eggs with the milk, then add to the dry ingredients and mix quickly.

Divide mix equally between the muffin holes and bake at 170C for 10 minutes, until golden and well risen.

When rushed for time I have also cooked this in a large frying pan with some ghee or lard. Pour in the batter and cover with a lid, cook on low until the top is just set, carefully flip over and cook the other side until it is browned. Cut into quarters and split horizontally.

Thanks Nancy. I guess you can't have them unless you subbed the whey? But then baking is so un-paleo anyway :lol:

That's called a muffin top pan, right?

I think mine was called a yorkshire pudding pan. The indents are just under four inches diameter.
