Outrageous Oopsie Zucchini Pumpkin muffins

3 eggs separated
1/8 tsp. cream of tartar
3 oz. cream cheese
2 tsp. s.f. vanilla extract
1 tsp. s.f. Maple extract
2 oz vanilla s.f. Torani syrup
1/3 c. grated zucchini- squeeze excess liquid
2 T. canned pumpkin
2 T. of bran or psyllium
1 T. cinnamon

Beat the 3 egg whites with cream of tartar till stiff peaks form, then add maple extract and set aside.
Process yolks with cream cheese, Torani syrup, pumpkin, cinnamon, bran or psylium till combined. Remove from processor and stir in grated zucchini.
Fold egg white mixture into yolk mixture and fill muffin tins.
Bake in preheated 400 degree oven in mini muffin tins for approx. 20-25 minutes. Makes 11 mini muffins
*Optional put a dab of s.f. cream cheese frosting on each when cooled.

Carb count when using bran is .75 carbs per muffin

I have one question though--- is this a induction okay recipe?

Dr Atkins did suggest we could add a tablespoon of bran to prevent constipation on induction!

So assuming you are not eating the whole batch at once (and maybe exceeding your cheese & veg quantities) I reckon it would be induction-legal!
