Salmon Patties

1 (14.75 ounce) can canned salmon
1 egg
1/2 of a 3 oz bag of pork rinds, crushed
1/4 cup chopped onion
1/2 teaspoon Old Bay seasoning
1 teaspoon dried parsley
1 dash salt
1/2 teaspoon pepper
2 tablespoons lemon juice
Some sort of cooking oil

I also sprinkled seasoned salt over the patties after forming them

Directions
1 Drain and reserve liquid from salmon. Mix everything together.
2 Make into patty's. If mixture is too dry to form into
patties, add reserved liquid from salmon.
3 Wait about 5 minutes for the pork rinds to absorb the moisture.
4 In a frying pan, heat oil. Place patties in pan.
Brown on each side, turning gently. Drain on paper
towels and serve.

I couldn't find nutrition info on old bay ... but I doubt its anything

significant; half a carb at most

Thanks Jamori, I wonder why my salmon cakes were not holding together. I didn't wait long enough for the pork rinds to expands.

Thanks for the idea!

I tried this without the pork rinds, adding ground almonds and a few teaspoons of olive oil... they turned out pretty good!

I just made these tonight except I didn't have the pork rinds so I put in 1 C soy flour instead. Also I didn't have the lemon juice but I did have Paul Newman's lemon olive oil salad dressing so I put some of that in. I DID have Old Bay! I fried these up and served them with a dollop of chipotle mayo topping and they were great!

Made these today for breakfast, and saved two for lunch. They are DELICIOUS! I didn't have pork rinds, so I was sweating it out, but they turned out just fine. I replaced the egg with Egg Beaters and used Pam cooking spray to fry them- no sticking problems.

definitely will try these tonight! One thing, it's easy to be Lent compliant on this wonderful diet......my first day back on this, wish me luck.
