I made chicken stuffing. Here is the recipe. It made enough to stuff two chicken breast.
1/2 cup of finely crushed pork skins
1/3 cup of finely diced onions
1 stalk of celery, finely chopped
1 tbsp. of margarine or butter
1 tsp. of sage
1 tsp. of garlic salt
1 tsp. of chicken seasoning
Saute onions and celery in the tablespoon of butter until tender.
Add seasonings and pork skins. Mix until moist. Split chicken breast and make a pocket. Stuff with 1/2 stuffing mixture and fold with skin and seal. Bake at 350 for an hour. Makes 2 serving using two chicken breast.
I could only eat one and I am saving the other chicken for tomorrow. I might try some nuts in it next time.
