I have two friends coming for lunch tomorrow. One is on a very low fat diet due to pancreatitis problems. I really don't want to use my reward meal if possible because we have to eat out tomorrow night.

Does anyone have any suggestions on what to serve? I was thinking of the mustard tarragon chicken and serve it with a salad. This is the the carbohydrate addict cookbook but I am really not sure about it. I haven't tried it before. I am going shopping tonight so I am very open to suggestions.

I haven't tried that recipe either, but it sounds yummy! Sometimes, when I have eaten my RM for lunch and then my husband (to skinny to LC!) are eating dinner at home, I'll make him potatoes/pasta/rice and just not eat any. The other night we had steak, spinach with mushrooms, salad, and he had potatoes as well. You could do something like that for your friends (using fish or chicken for the low-fat part), or you could always have a salad, entree and veggie when you went out to eat that night.
