Here's one of our favorite LC desserts! Easy to make, easy to pick up and pop in your mouth!

Chocolate Chip Cheesecakes
(Protein Power, p. 287)

1 large Graham cracker, finely crushed
1 extra-large egg
1/4 cup white sugar OR NutraSweet
1/4 tsp. vanilla
1 8-oz. package cream cheese - softened
2 Tbs. mini chocolate chips

Preheat oven to 350. Place paper cup liners in a mini muffin tin an distribute crushed graham cracker among the cups. Put all the ingredients except the chocolate chips in a food processor and blend thoroughly. Alternatively, beat the egg, sugar, and vanilla together well with a wisk then incorporate the cream cheese. Fold in the chocolate chips and spoon into the muffin cups. Bake for 15 minutes or until the edges are set and the center is still moist. Remove the cheesecakes from the muffin tin and let them cool. Refrigerate for at least an hour before serving.
