i've had a real craving for campbell's tomato soup. does any one have a lowcarb recipe for a soup resembling this? i'd really appreciate it.

Somebody triggered my tastebuds for tomato-ey soup when they mentioned V8 juice. Anyway, V8 is sugar-free; a 250 ml serving has 8.9 carbs and 1 gm fiber, and it tastes pretty good heated up. I like to mix it half and half with a cup of bouillon, beef is best, (you CAN find sugarfree varieties, just have to look). This will make 2 mugs of hot tomato-beef soup, for under 5 carbs each. You could probably add a couple Tbsp of heavy or sour cream, i never have so don't know if it would curdle or not.

1/2 cup tomato sauce (I used Hunts brand)

1/4 cup heavy cream

1/2 cup water

1 1/2 tsp. splenda


I was goofing around in the kitchen and came up with this. I think it looks and tastes like campbells tomato soup made with milk. Let me know if you like it or not.

A slightly more controlled calorie, dairy-free and low carb version (some of us do have to at least watch our calories :D to a certain point, unfortunately, or can't do dairy).

3/4 cup tomato juice
1/4 cup water
1 teaspoon ThickenThin not/Starch thickener
1 teaspoon sugar equivalent
1 beef bouillon cube
pinch cayenne (optional)

Combine and heat.

Since sweetener and bouillon cubes vary in their dissolving ability, it may help to dissolve them in the water (heat if necessary) first and then add the not/Starch and tomato juice.

Hi! I like making this in the summer, it's a great way to use alot of garden tomatoes. This is so much like Campbells, but much better, and very simple:

4 large ripe tomatoes (or about 6 medium), coursely chopped

1/2 cup chopped onion

1/2 cup chopped celery (optional)
3 Tablespoons butter

1/2 cup heavy cream

salt & pepper to taste

Directions:
Saute onion and celery in butter until softened. Add chopped tomatoes until cooked through, around 10 minutes. Allow to cool, and then place veggie mixture into blender, and blend. The original recipe calls for straining this mixture after blended, but I have found that if you blend it thoroughly, there is no trace of seed or tomato skin. Return mixture to sauce pan and reheat, adding 1/2 cup heavy cream, or to taste.

This is amazingly thick and creamy, probably because of the bulk of veggies pureed. Using Roma or paste tomatoes adds to the thickness. A tasty twist on this recipe is to leave out the cream, and add 1/2 cup chopped fresh cilantro, when reheating the mixture.

I hate to correct the experts but V8 juice is NOT sugar free. Check the label. I am not talking about fusion or other varieties, I am talking about regular Campbell's V8 juice.

Wow, another ancient thread dredged up from the cobwebs :lol:

You're correct, V-8 is not technically sugar-free, as it contains naturally occuring sugars from the vegetable ingredients. It would've been more accurate to state that it's free from *added* sugar.

Some brands of mixed vegetable juice do contain added sugar and/or hfcs, so it's important to read the ingredients list as well as the nutrient panel :exclm:

My Mom made the best tomato soup. I haven't tried to recreate the recipe without the dairy (yet) but it was a large container of tomato juice, a can of evaporated milk and garlic powder. I think that's all she put in it.

I made tomato soup yesterday using the exact recipe that you posted, but I got it from another board. I used 8 oz. can of Contadina's tomato soup.

Great recipe! It was wonderful and very easy to make.

What I'm looking for is a recipe for low carb, sugar free ketchup.

Katy, I have tried several types of sugar free ketsup's and found that my favorite is Heinz Low Sugar, if I recall it is 1 gr per T, but I cannot tell a difference between it and regular Heinz ketsup.
