I made this up today. I was going to make my famous pumpkin loaf, but i
didn't realize i used my last can of pumpkin, so i had some fresh
cranberries in the fridge and wondered what i could do with them. This is
waht i came up with. My faince, who doesn't LC, took one bite and then went
and got himself TWO SLICES! LOL. This bread lasted 5 minutes! For
thankgiving i'm going to make a couple of them! :)
1/4 cup atkins bake mix (or whatever you use i'm sure would work)
1/4 cup Vanilla Praline Designer Whey
2 Tbsp vital wheat gluten
2 eggs
1/4 cup Carb Countdown milk (mine is the 2% one i think, the blue one)
1/2 cup fresh cranberries, chopped
1/2 tsp cinnamon
1/4 tsp vanilla extract
AS to taste
Mix all ingredients together in a small mixing bowl and mix well. Pour into
a greased glass loaf pan and bake about 20-25 minutes at 350 degrees until
done.
I will have to figure out how long to bake a larger recipe, as i just made
this up today and guessed, and kept checkign on it until it was done. LOL.
It was SOOOOOOOO good warm with some butter though! :)
