I was wondering if any of you know any foods we can have on Atkins that our Chineese or Mexican. I am craving both like CRAZY.

Mexican: Try various combinations of [cheddar] cheese, green onions, salsa, avocados, sour cream and ground beef/chicken. Have you tried making "taco shells" with cheddar cheese and stuffing them like tacos?
Chinese: Shredded Cabbage and beef stirfry, drizzled with toasted Sesame Oil and sesame seeds. Yum.
I don't know if that's obvious stuff, but there's my suggestion.

Add a little fresh ginger to that stir fry above (and feel free to use chicken, shrimp, beef, or fish) along with some peppers and celery, and then....right before your ready to call it done...throw in spme fresh spinach or arugala and take it off the heat as soon as it's just a bit wilted. :yum:

I also make a mexi chicken with homemade lc salsa. Just lightly fry chicken breasts in olive oil. Place in a baking dish, top with a bit of salsa and cheese and bake....serve with salad. (I usually make this in a big batch because leftovers are great for low carb wraps with lettuce, avocado and a dash of sour cream.) My non-lc hubby and kids love it.

If you have access to a crock pot it is super easy to put chicken breasts or a beef roast in the crock pot with a jar of your favorite salsa. When the meat is cooked it makes shreds that you can put on a bed of lettuce and cover with sour cream, cheese, and hot sauce. mmmmm.

There are a number of good low carb teriyaki sauce receipts. Make a strifry and drizzle a little of the sauce over as you finish it. Very easy and tasty.

Stir fries are wonderful for chinese cravings. You can even use diet sodas such as the diet rite tangerine to make orange chicken.

For mexican, I make taco salads with homemade taco seasoning, lettuce, salsa, sour cream, cheese, black olives. YUM.

For mexican, the other day I cooked boneless chicken thighs in the crockpot with salsa. When they were done, I served them over cauliflower "rice" and topped it with som extra salsa, shredded taco cheese, chopped cilantro and some sour cream. It was really good!!

I'm having Quesadillas for dinner tonight. :) Minus the tortilla of course I'm replacing it with lettuce and making a wrap.

I never ate much of, or craved either. My "jones" is italian food and pizza.

For a mexican craving, try a taco salad -- homemade of course. When I need to mix up my lunch menu a bit (from a standard salad w/chicken), I will plop a hamburg mixture of taco seasonings (homemade) and a small amount of picante sauce on top of a romaine/spinich mixture. Top that with some sour cream and homemade guacamole. :yum:

I make my own stir fry with seasonings (so sugar) and lots of low carb veggies and whatever meats I have on hand. For Mexican, I love fajitas - again lots of low carb veggies and meats (meats, lots of peppers, and just a bit of onion and tomato) and spices, then top it with sour cream and guacamole - just eat it without the tortilla. I know you can use low carb tortillas, but I actually prefer mine without any tortilla. For salsa dipping, I like pepperoni or cheese crisps or even just pepper strips (green, red, yellow, or a combo).

I wished I craved foods like that. I crave things like Golden Grahams cereal. No substitute for that!

For Mexican, I fix fajitas (beef or chicken or pork or chorizo with grren/red peppers, onions and lots of spices) and don't put them in a tortilla. For Chinese, I fix stir fry (chicken thighs with onions, green peppers, garlic, snow peas and water chesnuts with lots of spices) and omit putting it over rice.

I do exactly the same! I grill up some chicken breast that I marinated in Red Hot sauce and some veg. oil, then sautee it with peppers and onions and eat it in a bowl with grated cheese, full fat sour cream and guacamole. One of my favourite meals!!! I call it 'bowl fajitas'.

Also, a taco salad without the tacos! Fry up ground beef, chicken or turkey with some onion and peppers and season with chilli powder and red hot or tobasco or whatever seasoning you prefer. Pour it into a large bowl over a green salad (I prefer shredded iceberg lettuce with tomato). And top with whatever you like - grated cheese, sour cream, guacamole. The salad gets warm, it is really yummy!

All of your wonderful ideas and recipes just gave me an "epiphany" of sorts:

Dont you just LOVE this way of life? I mean, when I was a kid, my Mom would have killed me if I just ate the Pizza Toppings and left the crust, or ate the insides of the taco but left the shell, or the stir fry without the rice, the burger without the bun, etc.... I guess maybe we were alot smarter as kids than everyone thought! We wanted to go straight for the GOOD stuff! The buns and shells, and rice are just "fillers"!! :yay: We dont HAVE to eat them any more!!! :p
