1 cup Gluten Flour (24g)
1/2 cup Oat Flour (24g)
1/2 cup Wheat Bran (6g)
2 tsp yeast (1.4)
1 tsp sugar (food for yeast) (4.2g)
1/2 tsp salt
1 whole egg
2 tbsp oil
1/2 cup CarbAware, warm (low carb dairy product) (1.5g)
1/2 cup water (warm)
In breadmaker add yeast and sugar. Then add rest of dry ingredients on top. Add liquids last. Run through dough cycle. (mine is 2 hours long) Split dough into 2 loaves. Bake in 375F oven for 30 minutes. Total carbs: 61.1g
Let loaves cool to room temperature then put them in freezer until they are quite stiff, almost frozen.
Preheat over to 350F.
Cut them into slices, then cut the slices into 4 or 6 pieces, whatever you prefer. It makes a fair amount of 'nachos'
Put them flat on cookie sheet and give them a quick spray with oil.
Sprinkle salt on them and bake in over for 5 minutes. Turn them over, quick spray of oil again, then put your favorite spices (cayenne, pepper etc) on them. Bake for another 5 minutes.
They should be nice and brown now and quite crisp.
Put some on a plate, sprinkle your favorite cheese on them and microwave them until it's melted. The nachos will stay crisp. Dip in a little of your favorite salsa...(low carb of course)..
