These are really good. You need to bake them a bit longer, otherwise they're a bit delicate. But really almost like the real thing.
2 eggs
2/3 cup heavy cream
2/3 cup water
1/2 cup olive oil
2 tablespoons vanilla SF syrup (or Splenda)
2 cups Carbquik
2 teaspoons baking powder
Preheat the waffle iron.
Combine the wet ingredients. Combine the dry ingredients. Add the dry ingredients to the wet ingredients and mix, but don't overmix (will be lumpy).
Spoon into waffle iron. Bake a few minutes longer than normal. (My last batch was the best because the iron was hotter.)
Makes 16 waffles. My iron does 4 at a time.

Calories: 140
Fat: 14 grams
ECC: 1 grams (7 total, 6 fiber)
Protein: 4 grams
