Puffy Blue Cheese Omelet
Ingredients for 4 persons: 8 eggs (5.7 ECC), 3/4 cup Roquefort blue cheese (2.3 ECC), 2 tablespoons crème fraîche (.8 ECC), salt, pepper.
Preparation: 5 minutes. Cooking: 10 minutes.
Preparation: Separate the egg yolks from the whites. Beat the whites with a pinch of salt to firm peak stage. Crush the Roquefort in the fork then add the egg yolks, the crème fraîche* and the whipped whites. Mix delicately. Melt the butter in a large frying pan. Add the mixture and cook slowly, shaking the frying pan from time to time to prevent the omelet from sticking to the bottom. Preheat the oven broiler. After about 8 minutes of cooking, place the omelet under of the broiler until it turns golden. Serve immediately.
Total ECC: 8.8; per person: 2.2 ECC.
* If you don't have crème fraîche, heavy whipping cream may be substituted.
