Here's a good recipe I made up the other day
-Ancho Pepper
-Low-carb bread
-Eggs
-Cheese
-Butter
Slice the pepper(s) in half, sear in pan on high heat for a while, then add a 1/4 cup of water and cover to let the pepper steam while you toast, then butter your low-carb bread. Dice the buttered bread and set aside. The water should be mostly gone from the steamed peppers now, throw a slice of cheese in each and cover again. Fry up your eggs (I just fry the yolks, over easy so they are nice and runny). Put the diced bread in the cheesy pepper, top with the eggs and salt and fresh pepper to taste, serve with a sharp knife. My wife gave me a funny look when I brought them out, but after trying proceeded to devour them :)
