I was SO dying for some pancakes this morning. I found a great recipe in alt.diet.low-carb last week that called for wheat gluten, but I don't have a clue where to get that. So, I improvised with Atkins Chocolate Shake Mix. Believe it or not, the pancakes were quite tasty and really hit the spot. I had them with butter, since I don't have any SF or LC syrup. Here's the recipe:
3 Tb Atkins Chocolate Shake Mix
2 Tb Cream
1 Tb water (I used a little more because the shake mix is so sticky)
1 Tb Oil
1/2 Tsp baking powder
2 eggs
1 pkt Splenda or Equal
Couple shakes of salt
This made two rather large pancakes. They were nice and fluffy! Enjoy ...
