Ok I was making muffins this morining and started adding stuff and this is what I came up with...they turned out delish!! even my four year old ate them :)

1/2 c crushed flax seeds
1/4 c vanilla protien powder(I used vanilla ice cream flavored yumm)
1/4 c Splenda
1 1/2 t baking powder
1/4 c & 2Tb soy powder
2 Tb oat bran
1 Tb wheat gluten
1 egg
1 1/2 t vanilla
1/2 c water
2 Tb cream
2 Tb oil
mix dry, mix wet seperatly, add to dry. put in six muffin tins. sprinkle splenda/cinnomon mixture over top. bake 350' for 20 min

I keep a cinnomon/splenda mixture in a zip lock bag so I don't measure this...It comes in handy on lots of toppings!!

I haven't run totals yet...but it has some good fiber counts :) I hope you enjoy!
