Hi Karen, this sounds great!! But call me stupid I have never heard of Nori sheets? What are they and where can I buy them.. also are you talking about canned shrimp, or fresh shrimp?

Shannon, they're a kind of sushi sheets, available at large supermarkets with Asian sections, or at Japanese/Asian supplies.

Karen,

Please mention how to soften, or prepare the sheets. I tried it once, but it seemed too dry and hard to cut. All it has on the back is how to prepare the filling!

Hi Blondie,

I use fresh or frozen and thawed shrimp for the rolls.

And Wa'il, the nori does not have to be softened. If you don't have a sharp knife, the rolls will be difficult to slice. If you let them sit for a few minutes, the nori will soften, but the rolls will still tear a bit if you don'y have a sharp knife. An alternative is cutting the sheets into 4 pieces and using them to scoop up the filling.

The nori has to be toasted.

I've just begun playing around with Japanese food lately!

Preferably over a gas stove, you just hold the nori sheet, or two together, over the flame, or burner, until it turns a darker color, I think about 15-30 seconds, or maybe a little more. It will be crispier, and easier to handle.

You need to moisten the edges with water to help it hold together. With regular sushi, the rice stays wet, so that's why that works so well.

I JUST DISCOVERED, ALL SOY SAUCES ARE NOT CREATED EQUAL!

Be sure you guys read those labels on soy sauce! I was shocked. Some have just water, wheat, and soybeans, and salt, while others have a number of added chemicals. I think Kikkoman is the safest one, but READ!

You can buy roasted nori (seaweed) sheets. Mine say they have one carb and one fiber per sheet, meaning they are free food if you deduct fiber.
