Waffle Recipe

1 8 oz package cream cheese softened and whipped into a smooth consistency
3 eggs
3 tablespoons Splenda
½ cup bake mix (Atkins or home made)
½ tsp baking powder
¼ cup buttermilk (I just use heavy cream)

Put 1/8 cup of batter into the center portion of your waffle iron for each waffle. Makes a round and yummy waffle. Each waffle is approximately 1.2 carbs.

Beat until they have the same look as pancake mix. Add a little cream to thin if necessary.. These are great with a sugar free syrup.

If you want to use them as a burger bun, cut back on the Splenda to 3 teaspoons, add garlic powder, onion powder, or whatever floats your boat!

Imagine these as burger buns, waffles, I made the waffles and put sliced fruit on it and home made whipped topping. WOW!! I also made them with onion powder, garlic powder and a little red pepper and used them as burger buns! YUMMY!!!

I’m telling you try this recipe you wont regret it. Thanks to sherrielee from the lowcarbfriends.com board for this godsend!

If you dont own a waffle iron, run...dont walk to your local wal mart of other appliance store and get one...Well worth it's weight in gold!

Otherwise cook them on a greased cookie sheet in a thin layer.

I have tried the corn bread and it is pretty good. My husband "who hates lo carb" ate some before he knew it was something different. Not exactly the same texture but pretty darn close. I haven't got around to the waffel bread cause my kitchen is under contruction

I just did a search and don't see the corn bread recipe...You have it handy?

1 -8oz pkg cream cheese softened
3 eggs
3tbsp splenda
l/3 cup atkins bake mix
l/2 tsp bking powder
l/2 cup soy grits (available at www.bobsredmill.com)
l/4 cup buttermilk (I used heavy cream w/ tsp vinager)
Beat cream cheese with mixer until blended smooth add remaining ingredents and let sit for 5 min.

400* oven. approx 15 min or 20
grease 9x 9 pan pour in mixture. makes 9 servings at 3.5 carbs each

Will almond flour substitute for Atkins Bake Mix?

Would I sub the almond flour exactly for the baking mix?
