heres the recipe.. i put these in large muffin tins and they came out really great with a nice 'crust' (they are, afterall, pretty much quiches).. perfect for take along! The blue cheese is so yummy!

8 oz cream cheese
6 large eggs
1/4 c blue cheese crumbles
10 oz frozen broccoli (chopped), thawed
1/4 c cream
1/4 c flaxseed meal (cant even taste it.. great way to get in more fiber!)

soften cream cheese.. mix together ingredients.. scoop about 1/4 c (i had a bit more) into oiled BIG muffin tins (or tart pans).. bake ~ 350 for 30-40 mins (until they are golden brown and 'crusty')

makes 6 big cakes (or you could use little cupcake tins too for smaller servings)

you could probably use less cream cheese if you wanted to.. but they might not come out the same :)
