Use jicama instead of chips! Peel it (just chop off the peel sides with a knife if you are in a hurry), slice it reasonably thin, layer them on a plate with cheddar cheese (or Mexican cheese), and sprinkle chopped bits of jalepenos around. Microwave it til the cheese melts.

You can add guacamole and/or sour cream afterwards, too.

It works because the jicama is really crunchy! Jicama is one of the unlimited veggies on Atkins. I am starting to like it better this way than with corn chips, as far as I remember!
