Spinach Strawberry Salad
1/4 C vegetable oil
2-3 packets splenda
2T white vinegar
1/2 t salt
1/4 t pepper
1/4 C sliced almonds cooked with 4 packets of splenda*
Fresh spinach, washed. dried and chilled for 6-8 people
1 C thin cliced celery (optional)
2T chopped green onion tops (optional)
10 medium strawberries sliced
Combine dressing ingredients, shake well an refigerate. Place almonds and splenda* in small skillet. Stir over medium heat watching closely until almonds are goldne brown. (I had to add 1/2 t water to get them to crystallize) Remove to small bowl and cool. Place spinach in large salad bowl. Add celery, green onion and fruit. At serving time add dressing and almonds, toss.
*Only sweetner that will work.
