"Just Whites" is 100% dried egg whites and is made by Deb El. Heres the recipe:

3 tbsp just whites
half cup warm water
half cup splenda
1 tsp vanilla
quarter tsp cream of tartar

preheat oven to 225 and line a cookie sheet with parchment paper. Add just whites to the water and break up slightly with a fork. Let stand for 2 minutes. Beat on medium speed until the just whites have dissolved and the mixture is frothy. Add vanilla and cream of tartar. Increase speed to high and continue to beat, adding the spenda a tblsp at a time, until very stiff peaks form. Spoon large dollops of the mixture onto the cookie sheet, leaving half an inch between each, and bake for about 2 hours, turning the pan around half way through, until firm and crisp. If desired, cool in the oven with thedoor ajar for maximum crispness, or cool on a rack.

I tried to make merinques with regular egg whites and splenda about a year ago. They flopped big time - the taste was fine but they looked more like pancakes and you had to chew them rather than let them melt in your mouth. Any suggestions with real egg whites??
