Default Thanksgiving Recipes????

I am really stressing!!!! I have been on Atkins since June 20th without a cheat,,,but the holidays are right around the corner!!!
Anyone have any good recipes?? I heard somewhere there is a cheesecake recipe that is good, but my real worry is pumpkin pie!!! What can I substitute for that??? Is there a low carb version?? Maybe pumpkin cheese cake????
Lets see if we can come up with a low carb menu for Thanksgiving...anybody got any ideas???

Lightbulb Pumpikin pie replacement

My husband said he preferred this recipe to pumpkin pie, so we will have this pumpkin custard instead of pie. It is just like pumpkin pie without the crust. I bake in the small custard cups to portion servings. i use Mastercook to determine the correct carbs and fiber.

Pumpkin Custard
Serving Size: 8

3/4 cup Splenda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ginger
1/2 tablespoon cloves
3 large eggs beaten slightly
15 ounces canned pumpkin
1 cup heavy cream
1/2 cup water
1 cup heavy cream

Mix all ingredients in a large bowl. Pour into 8 custard cups. Bake in a pan of water at 375 degrees for 50 minutes. Serve with a dollop of whipped cream.

I am so excited!! I was realy stressin!! I knew I could handle the turkey, the veggies and the other stuff, but my absolute favorite pie is pumpkin!! You have saved the day!! I cant wait to try it,,,gonna do that this weekend, after all,,,gotta practice you know, before the big day!! I'll let ya know!!

I just made a pumpkin cheesecake yesterday. I'm trying out new recipies for Thanksgiving. I got it at the Lowcarbfriends.com. Go to the recipe section, they have a holiday area. You are sure to find some good ones there. The one I did called for 24 pkts sweeter, but I used 1/2 cup Splenda....was sweet but not overly.

Thanks !!! I am going grocery shopping tonight,,,so will tryout some of these recipes........just the thought of Pumpkin Cheesecake makes my mouth water!!!
I really appreciate all the help you get on this board. I have joined several others and they have all been helpful, but this is my favorite!
Got another challenge coming up tomorrow,,,our church is having a wiener roast .......gotta figure out what to take...dont want all the carbs of those hot dogs!! The marshmallows will be the real test!!! Love em....!!

Hi musicmama, for your weinie roast, try taking along some good kosher hot dogs....(I don't think these have fillers). Every time we go to Costco, my hubby wants a foot long hot dog that they sell at the snack bar, they are the kosher beef and soooooo good. I always have one without the bun. ) We do alot of pot lucks in one of my groups, I take something low carb for them and also extra for me in case there is nothing or little that is low carb. Raw veggies and blue cheese dip is nice. Or a broccolie caserole without bread crumbs. Any one for pork rinds instead of chip? Don't know about the marshmallows, maybe you need to take a good low carb dessert to help keep you away from them.

Guess what....the wienie roast got cancelled!!!! Weather was cold and rainy here!! ANd besides that, I got to feeling puny,,,,not real energetic. There is a lfu bug going around here, and I was afraid I was getting it. But I realized that I got out of the habit of taking my potassium,,,,,i deplete very easily and have been hospitalized before because ofit, even before the Atkins plan was part of life for me. So, I get to feeling draggy and weak,,,,and then I remember!!! So, back to the meds today.....and the vitamins. I do okay for awhile and then get lazy. You would think I would learn!!
As for recipes,,,I have received some great ones for lo carb green bean casserole, pumpkin pie, cranberry jello mold, breadless stuffing. noodle- less lasagna....cant wait to start em,,,,even got one for lo carb egg nog!!! I will pass em on when I ge tmore time to post....gotta run right now. Have a great day!!!

I'm working on a low carb pecan pie recipe. I've made 2 so far, and they aren't QUITE to the point of sharing yet. Hopefully #3 will turn out great.

I have all my friends asking me for recipes now,,,,,even the ones who arent lo carbing. One friend asked me how I was losing weight..I told her I was counting carbs and she said,,oh,,,all you eat is meat, right??? I really get tired of that assumption,,but I smiled and told her about some of my recipes,,,,,now she wants a copy of some!!
Hehe.........sneaky way of converting someone to our WOE!!!

Does any one (Karen?) have any thoughts as to how much heavy cream goes into the custard in Booper's Pumpkin Custard recipe? Would that be 1 cup in the custard and another cup for whipping to put on top? Two cups total in the custard?

It was JUST what I was looking for, but I want to make sure without wasting a precious can of pumpkin.

I would say that the last 1 cup of whipping cream is for the topping. Use the ingredients up to the 1/2 cup water for the custard.

A couple things a person could take to a potluck or outing is cole slaw made with real mayo or deviled eggs. Just a thought. I'm making cole slaw for Thanksgiving so I don't eat the dressing. ) There's also a pumpkin pie recipe in the recipes section. I tried it, it's really good. I'm making that as well. What if I don't have custard cups for this pie? Has anyone tried using a springform pan that is used for cheesecakes? And, if I do use this, do I put it in a pan of water as well?

I'm probably going to try it, but I was just wondering if anyone else has, and if they have any advice for me. I'll let you know how it turns out.
