Default Lemon Cake

OK, this is my first time posting a REAL recipe that *I* created!! I kinda took the 3 minute cake thing and tweaked it.

Here goes:

2 T melted butter
1 beaten egg
grated zest and juice from 1/2 lemon
splash vanilla extract
2 T coconut flour
1/2 t baking powder
1 t oil or mayo for moistness
dash heavy cream

Mix it all up and nuke for 1 minute, 20 seconds (on my microwave - you may want to adjust for your own oven) I made it in a 2 cup pyrex glass measuring cup. I ate this with Raspberry DaVinci whipped cream and a couple of fresh raspberries.....TO DIE FOR if you like lemon ( I LOVE the combination of lemon & raspberry!) It comes out nice and spongy!! Don't know what exact carb counts are for this, sorry!!

I like that this has the coconut flour. It's hard to find good recipes that actually work with the coconut flour. The question pops up regularly.

I use coconut flour all the time in the mock cupcake recipe, too. I really like it because it adds nice bulk without a weird texture - much more "tender" and fine than almond flour, and less gluey and dense than Carbquick.

Oh that does sound good Betz! Hmm do you think I can make coconut flour by grinding up reg. coconut??? So many products they don't have in my area! Bummer... By the way, never even noticed a "sweet treats" area until you told me. lol I put all mine in the general recipe section. ikes!

Good question - I wonder...

I bought the coconut flour online at Netrition - it was pretty inexpensive, and it lasts forever....I usually just use it one T at a time. YUMMY flavor, too!!

I stalk the Sweet Treats section for new stuff!!

I did it.
I used 2 TBS of unsweetened coconut and pulverized it with the baking powder in the coffee grinder. I mixed everything in one bowl and nuked it. It was so light and fluffy. I was worried about the taste because there is no sweetener but I did like you said. I poured a little cream and davinci raspberry syrup over it.
I almost laugh because of the pink color it was a very Barbie doll kind of meal.
This is one successful tasty little cake.

Penelope - I made this again over the weekend and this time, put a couple of drops of Sweetzfree in the batter - it gave it a bit of sweetness, but not a lot. Lets the lemon zing right through!! I'm glad you liked it!

how much lemon zest? Are you sure only 2 T. coconut flour?

I use the juice and zest from 1/2 a large lemon. Yep, 2 T coconut flour does it - coconut flour is quite "thirsty". Remember, this is a version of the 3 minute cake that you make in a pyrex 2 cup measure in the microwave, not a full cake. Makes 2 servings, or one if you're really hungry!

I tried this recipe last night but added 8 drops of sweetzfree (equiv 1/3 cup sugar). Then, I topped it with raspberries and whipped cream.... Wow. Pretty good and fast.

Lightbulb 3 Minute Cake Variations

I used your recipe as a starting point and made 3 minute brownies this morning..... They turned out pretty good.

3 Minute Brownies - 3 net carbs per serving

This is my own variation on the 3 minute lemon cake. I made it on a whim and it turned out pretty good. Once again, I use Aloha Nu coconut flour (purchased from netrition.com). This has only 1 net carb per 2 tablespoons. Bob's Red Mill Coconut flour is easier to find but has 4 net carbs per 2 tablespoons.

2 T melted butter
2 T Cocoa Powder
Splash Vanilla
1 egg
12 drops sweetzfree (or other sweetener equiv. to 1/2 cup sugar)
1/2 t. baking powder
1 T. oil
2 T. coconut flour
1 T. heavy cream or Hood calorie countdown dairy

Whisk in bowl. Nuke for 1 min. 30 seconds. Times may vary depending on your microwave. If you want, you might pour some Walden Farms chocolate syrup on top.
