Talking Ya like Alfredo? this is so Yum!

Well, I surprised myself tonight.....I set out to make chicken, but because I ran out of things to do with it, I decided I wanted to make a creamy butter garlic sauce. I ended up with something more like alfredo and OMG it was good......

The only problem is, I kinda made it as I went along, so I am gonna estimate measurments best I can. But As long as you know the ingredients, and how i cooked it, I am sure ya can wing it to!

For chicken and sauce what you will need:

Boneless, skinless chicken breasts (1+lb)
Heavy Cream
Butter
Canola Oil
Fresh minced garlic, and powder too
Salt and Pepper
Parmasean Cheese (powdery grated)


First I filled the fying pan with Canola........
Heated it up, then threw in about a table spoon of the minced garlic and let it brown...

Then, I cooked the chicken in the pan, adding a tiny bit of salt and pepper to the cutlet, and a pinch of garlic powder
Everytime I put new cutlets in the pan I added a bit more garlic....

Pat with paper towel to get off excess oil and put aside.....


For sauce:

First, I melted about a half a cup of butter (maybe less) just slightly, over about med/high heat

Then I added about a cup maybe a bit more of heavy cream...(I added as i went along to adjust he cream/butter ratio)

I added some fresh garlic, and salt and pepper

I let it come to a boil and boil for about 5-6 mins, stirring every 2 mins or so....

then when it reduced a bit, I added about 1/4 cup of the parmesean cheese ( too much is too cheesy, but add a little or alot for your taste)

Then I stirred, and added some garlic powder, and kept it the light at low/med

Take it off the light and let it sit a min or so, and it will thicken!

Waala! Creamy alfredo! Oh, I also made about 6 long stalks of broccoli, steamed, and put the sauce on it!

Now, Nutrition facts.......

Chicken 0 carbs

However, alfredo in the store has carbs.....but this one, I would like your opinion on......

Heavy Cream = carbs
Butter = 0 carbs
Parm cheese = 1 carb per 1/3 cup

so figure the whole sauce has about 2 carbs?

I'd like to know your take on it!

Well enjoy my recipie, although it is a bit hard to understand, but it so good! If ya ever had the alredo dipping sauce at olive garden it tasted identical! Enjoy Guys!

Default Mmmm... Alfredo

This recipe sounds so good! I have been having cravings for something but I cannot put my finger on it. Oddly enough, it isn't for something sweet but I think this might just do the trick. I am definately going to try this tomorrow night for dinner.

Good stuff! Lemme know how it comes out! I loved it, and based on the ingredients, it is VERy low carb. Although, I know the 0 0 0 's add up =/

I finally tried this recipe tonight. It was wonderful. This will probably become one of my regulars!

What is canola oil? Is that sunflower oil or corn oil?

It's neither. Canola is a plant. We grow it in Canada and canola oil is very common here.

Hmmm...wish I could think of a similar example to compare, but my mind is blank right now. Sorry!

Default I ran it though Fitday

I used www.fitday.com to figue out the carb count this is what I got

Heavy cream 1cup=7 carbs
butter=0 carbs
parmesan cheese .25 cup=1 carb
Garlic fresh minced ( you didn't say how many)=1 per clove assume 2 cloves
garlic powder= 2 carbs a teaspoon can you believe it!!!

Total 12 grams of carbs for the whole recipe 0 fiber unless inceasing garlic fresh

Hope that helps...I am going to try this...mmmm

I tried this recipe. It is definately a keeper, with a few minor adjustments. I found it WAY too salty. Next time I will use salt free butter. I will omit the garlic powder (I had NO IDEA how many carbs were in this!), and at a little pepper to my taste.

I checked out a 'regular' alfredo recipe, and it is VERY similar. You are a chef, and didn't even know it.....or maybe you did?

This is just another European, U.S. translation problem . I found out that canola oil is called rapeseed oil in Europe so now it's all good and I can try the delicious recipe.!

Wowee!! I am so glad ya like it! I like to experiment, and as easy as the ingredients are, I didnt realize how to make alfredo was right under my nose! I too have adjusted some things, but I love to make this with chicken and veggies!!

Wow! I cannot believe it, its the 1st LC savoury receipe I've tried that I actually really, really enjoyed.

It tastes delicious and I'm gonna make it all the time.
