Default shrimp toast without the toast!!!!

I made this twice now and it's sooooo good! My boyfriend likes it and doesn't even know it's low carb!!!

Judi's Shrimp Balls or Shrimp Toast without the Toast!
8 oz raw shrimp (peeled and deveined)
2 egg whites
1 t dry sherry
2 green onions (both green and white portions cut into 1" pieces)
1 clove garlic (small)
1 thin slice of ginger (peeled-about the size of a quarter)
1/2 c water chestnuts
1/2 t cornstarch (not really necessary-I omitted it)
1/2 t salt

In a food processor, add green onions, garlic and ginger, process till coarsely chopped
add water chestnuts, egg whites, sherry, salt and cornstarch (if using-only 1 carb) and process till coarsely chopped
add shrimp, process till a "coarse" paste forms. I like some texture to the shrimp.

Heat some frying oil (I use Crisco) to 350
I measure out about a tablespoon full size ball and deep fry till brown.

Use soy sauce as a dipping sauce OR I like Chinese style hot mustard (1/3 C ground dry mustard mixed with 1/3 C boiling water and 1 T olive oil)

I just had some leftover shrimp balls for lunch, hard to believe they are low carb!

I'm gonna figure out how to make a low carb "duck" sauce to go with these and then i'll post it....

I LOVE shrimp toast. I am currently marinating the shrimp I do have already for another recipe but will have to get more to try this in the coming week!

I made this tonight for my dinner (looking for non-meat dishes for Fridays in Lent) - I've never had shrimp toast or shrimp balls, so I have no basis for comparison...but they were pretty good. I haven't eaten much ginger or green onions in the last year, so I was a bit startled by the taste at first - but it grew on me rapidly. And yes, they are good cold too.

I put the recipe in MyPlan - and with a total recipe carb count of 7.42 net carbs...and I got 29 shrimp balls out of it...that's about .26 carbs per ball (exclusive of any soy sauce or mustard, etc. that you might eat with them.) I thought they tasted fine without soy sauce, but with a touch of soy on each one, I definitely got a more 'oriental food' experience.

Ok...I'll confess...I ate the whole batch this evening. I will just have to make them again!

Highly recommended!!!
