Default Low Carb Eggs Benedict for 2

6 whole eggs
10 ounces ham slices
4 slices cheese
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
2 tablespoons parsley, finely chopped


For Blender Hollandaise
4 whole egg yolks
1/2 teaspoon salt
1 tablespoon lemon juice
1/4 teaspoon cayenne pepper
1 stick butter, melted


1. Poach eggs by filling a skillet with 2 inches of water and bringing to a boil. Crack eggs and cook 3 minutes.

2. Warm ham in microwave.
Cut ham in half. Place 2 halves of ham on each of 2 plates. Cover
each piece with cheese.

3. Place poached eggs on cheese. Cover with Hollandaise. Sprinkle with cayenne, paprika and chopped parsley.
Serve while hot.


5. Blender Hollandaise

6. Blend egg yolks salt, lemon juice and cayenne pepper in
blender. While blender is running, slowly dribble in butter.
Use immediately or transfer to a pre-warmed thermos

Servings: 2

Notes:
To convert for one lowcarb and one non substitute 1 English muffin
for half the ham.

This recipe can be multiplied as needed.

Licking the sauce off the plate is perfectly exceptable!

Per Serving (excluding unknown items): 1052 Calories; 94g Fat (80.7% calories from fat); 47g Protein; 4g Carbohydrate; trace Dietary Fiber; 1183mg Cholesterol; 3128mg Sodium. Exchanges: 0 Grain(Starch); 6 1/2 Lean Meat; 0 Vegetable; 0 Fruit; 15 Fat.
