Default Calamari Salad

To any lo carb squid lovers, this is a quick and tasty recipe. I order this at my favorite Italian restaurant -- even before I was a low carber.

1 bag of Frozen seafood mix but preferably just frozen calamari.
(the sea food mix has calarmari shrimp, mussels, and cuddlefish, but hey if that is your thing go for it.) I sometimes have a hard time finding it! The Wal-mart supercenter had it tonight, so I was quite pleased!

1 lemon cut into wedges
3-4 tbs Olive oil
1-tbs White Wine Vinegar
1/2 cup chopped celery

Follow the directions for cooking the calamari. It usually comes blanched, so I just boil it for a few minutes.

Drain and throw in a bowl.
Toss in Olive oil, vinegar, and celery. Sqeeze some lemon wedges, and throw them in the bowl.

Chill.

And that is it.
It is good and virtually carb-less.

sorry to burst your bubble but 1 oz of squid has 1g of carb. It's one of the few seafoods that does have carbs. For that reason I limit my intake (even tho I love it, in fact I love it so much, my 3yr old dd loves it too!)
recipe sounds good tho. I would probably add a small amount of garlic.
