Default Grecian Style Stuffed Chicken Breasts

I am a "dump cook" and have never screwed this recipe up. It was a favorite of my families for longer than I had even known about lc-ing! It's a bonus I can still have it! I think cooking is fun when you dabble and experiement.

This recipe freezes very well. - It will feed alot of people!

Grecian Style Stuffed Chicken Breasts

Filling:
1- 10 oz. Package of Frozen Chopped Spinach (Defrosted)
1- 6 oz Package Feta Cheese - Crumbled (I buy Crumbled Garlic and Herb Flavor)
1 cup Mayonase
Garlic to taste
Favorite Herbs (or I skip if I get the seasoned Feta)

All the Rest:
1 Package Raw Bacon (DONOT get pre-cooked)
6-8 boneless skinless chicken breasts (depending on their size)

Heat oven to 350

Cut large pockets into the Chicken Breasts. (I sort of cut them almost in half length-wise along it's side) Rinse with water and lightly salt.

Squeeze spinach to drain. Mix the filling ingredients together in a seperate bowl.

Put spoonfuls of the filling into the pockets in the chicken. Wrap each filled breast with 2 strips of bacon and secure with a toothpick. Place in a lightly "pam-ed" baking dish.

Bake for 40-50 minutes or until chicken is done.

Nummmmmm nummmm nummm! Hope you enjoy this as much as we do! Not sure of the total carb count, but I listed out the ingredients carb counts below as best as I could =)

Ingredients carb count:

1 cup Spinach, raw Net carbs 0.2
2 tbs Feta Cheese, crumbled Net carbs 0.8
1 tsp Mayonnaise Net carbs 0.1
1 Chicken Breast Net carbs 0
3 piece Bacon Net carbs 0.1
Spices have a bit but I am not sure how much

This recipe is really good! I highly suggest it...The only change I made was to add a tablespoon or so of extra virgin olive oil to the filling along with some salt and black pepper. I also drizzled the top of the chicken with olive oil before I popped it in the oven. Yum, yum!
