Thud did you mean me? I'm not vegan - I eat dairy & eggs - no chicken
My family still eat meat, somedays I'm surrounded hehe

Leftover canned wild Alaskan salmon mashed in mayo with a boiled egg and some "Southern Slaw" (finely minced cabbage, green pepper and onion) and a teaspoonful of horseradish. And a cup of coffee with half and half (switched back from the nut milks; it's just not the same without cream).

I had a Thud-inspired mish mash of an egg salad, really using up what is going bad in the fridge - sick so not hungry really. Egg salad w/tomato, avocado, mayo, garlic salt, pepper, and sauteed spinach. I couldn't eat it all so it will be lunch. High octane coffee/HC. Couldn't finish that either.

Thud, seriously, you should publish a cookbook of Eclectic 1 Plate Meals!

Two eggs fried in Kerrygold butter and a tall cup of coffee with almond/cashew milk. (A woman's prerogative to change her mind - kind of. When I can get the So Delicious organic unsweetened almond/cashew milk, I do. I like that. Lost my taste for their coconut milk, at least in coffee.)
